I have a Eric Gorr 225 and would like to lower the compression some. I did some testing with a motion pro gauge.
My 89/94kx 200 runs at 200 psi.
My stock 220 with 7000 miles is at 150 psi.
My sons 200 with a 220 kit is at 205 psi.
The EG 225 is at 220 psi.
So can I run two head gaskets or have the head reshaped?

Why do you want to drop the compression? From my understanding quite a bit of work gets done with the 225 kit (porting,, replating, head resurfacing, squish and bowl machining, polishing) and you select what type of fuel you want to run. Is it a case of "built for race fuel, but want to run pump"? You can run a couple head gaskets and lower it, but you likely lose any of the gains from porting, head work. Best thing to do would be contact Forward Motion and ask them for the best way to go.

I will try 2 gaskets to start with. I am getting spoiled from riding my 2012 250F. The 225 has a hit in the mid range that make it harder to ride in the tight stuff. Not much low end compared to my old 89 200?

Dropping compression isn't going to change the hit, that's all porting and exhaust valve timing and is the result of going to a big bore kit (most who do are looking for that big hit. You could try flywheel weight to help smooth it a bit, possibly also retard the ignition a tad. Should still have plenty of low grunt.

Would two cylinder base gaskets work? Just thinking it might have a different effect due to the port timing change.

maybe you need to rework your jetting and try a different needle. That can make a huge difference especially in moded engine.
