Fork and shock oil

I'm going to begin working on my forks this week, and would like some suggestions on what weight oil I should use in the forks. I wieght 190 w/o gear. I have already recieved .40 springs from race tech as well as seals. What oil level should I start w/?

Also should I take any of the shims out or just experiment w/ the oil level first?

Should I use the oem weight oil for the rear shock?

I believe race tec's site has all that info
