What are the advantage to bar risers and how tall should I go or are they a standard height. Thanks

Others might, but the only advantage I know I is they allow you to be in the proper position while standing. Usually taller people get them to avoid being hunched over.

They let you slide your forks up higher if you do a front end swap they're used for fat bars too a lot of times.
