I bought a my bike in pieces and discovered the barrel has a score (and the nikasil is also pretty much worn out entirely). I would like to figure out if I need to bore or just hone it. Either way it seems I need to undergo the nikasil plating process, but how do I know whether a hone will be enough?

The stock cylinder has Kawasaki's Electrofusion coating. The service manual states no honing. In a few areas, there isn't too much coating to do anything to. Here's a summary of what you will find on the internet:
Generally, honing a plated cylinder is a no-no. It gets diamond honed after plating and after that, the guy at home uses a light oil and a green Scotch Brite pad to deglaze.
Would you be opposed to letting the replating company determine whether it needs to be bored or repaired before plating? They usually can sell a piston kit of the correct size.
Look for Langcourt, Millenium or others.

I've managed to find a company in SA that does barrel repairs. They've honed and plated it and it looks BRAND NEW! :D

Nice. That's arguably the best KDX engine ever made for normal trail use.

Been told by some mates that the local companies mess it up but think I’m going to go with your suggestion.
