Any point in running a 19" back wheel?

I got a 00 kx125 for the forks. Is there any point swapping the back wheel as well?

Nah not into that. I love my KDX. But have been thinking that alloy subframe would go well on the KDX.

I have long wondered why Kawi didnt go with a removable subframe especially since its frame heritage came from the KX side. A bent subframe is what led me to build my hybrid. I looked at doing a chop job and just using the KX subframe, but it ended up looking like more work than just building the hybrid. Now that I've ridden it I don't think I'd go back to a KDX frame.

As for the 19" rear, the overall tire height between a 18 and a 19 is about the same. In the larger rim you end up with shorter sidewalls which could increase your risk of flats, although plenty of MX bikes run around the desert and woods with out much problem.

Mount up a different type of tire and have that rim ready for a quick swap. For example I use a trials tire most of the year except when I run a few winter races when I want a knobby tire because of the heavy mud and speeds.
