my swing arm bearings are shot, and while discussing this with a workmate of mine, he told me he's always just ripped the needle rollers out and replaced them with teflon bushes, he's had bikes all his life and said he's done this several times...
so, thats what i'm thinking of doing, but i thought i'd just ask if anyone else has done this, or can anyone think of a reason why i shouldnt?

I don't see what harm it would do to try.
The loads on those bearings are really high. I personally think teflon is going to start creeping pretty quick. I also think that while the motion may feel nice and slick on the stand, when there are actual loads there is going to be a lot of "stiction"
You only asked about swingarm bearings. The problems I see with trying to use bushings instead of bearings would be even greater in the rest of the linkage bearings. The swingarm seems to be the least loaded of the group, IMO.
I had this really cool little Husky 50 that used bushings. I think they were Delrin, though.

My lady's TTR has bushings instead of bearings. Makes greasing a HELL of a lot easier!

Would be cool for the linkage bearings, and since you have to replace them yearly who cares ha.
